Vegetarian Pate
It takes only couple minutes to prepare and you end up with a healthy, delicious and nutritious pate that goes great with bread (or not 😄 )
You will need:
2 lbs of zucchini (3 big or 4 smaller ones)
1 cup quick (instant) oats
3 eggs
1 cup of shredded cheese
salt, pepper
Herbs De Provence
Marjoram
Grate your zucchini on fine grating blade, sprinkle with salt and mix. Let stand for 15 minutes and then squeeze the excess of liquid as much as possible.
Put all ingredients together and combine them.
Lightly grease a loaf pan and put the mixture in.
Bake in 350F for 1.5 hour. Let cool and refrigerate for few hours until firm.
